How to make banana cake

Simple to make, nutritious and delicious!

Ingredients

250g (8oz) white self-raising flour
1/4 of an nutmeg,
1 teaspoon ground cinnamon (also can be a challenge to find)
125g (4 oz) butter
125g (4 oz) caster sugar
125g (4oz) margarine
grated rind of an lemon
2 eggs
4 medium over-ripe bananas, mashed
6 heaped tablespoons of honey


Method


1. Heat oven to 180°C/Gas Mark 4.

2. Sieve the flour, nutmeg and cinnamon into a bowl, and rub in the margarine.

3. Fold in the sugar, eggs, lemon rind, mashed bananas and honey.

4. Prepare a small baking tin. Pour the mixture into  the tin. Bake for 1 and a half hours.

5. Leave to cool in the tin for five minutes before tipping cake out of tin and leaving it to cool.


Options

Try it with sultanas and or pieces of walnut.
